Description
Don Mayo is one of our legacy coffees, and it’s close to our hearts. This micro lot comes from the Los Nacientes farm, within sight of the Don Mayo micro mill where it’s processed. We have been enjoying and tracing the subtle changes in this special coffee for over ten years. The flavor profile is made up of a rich, dark baker’s chocolate base, sweet raw honey, full syrupy body, and a long finish. The acidity is distinctly bright and lemony, and can even be described as champagne-like. The combination of that vibrant, sparkling acidity over the rich, darker flavors of chocolate and honey makes this coffee both light on the palate and mouth-wateringly delicious. The Don Mayo micro mill is also one of the sites where Electric City Roasting has contributed directly to community development in order to support the farmers who produce the coffee and their families.
